You will be happy to know that this recipe only contains three tablespoons of oil. Start off with day old rice, fry your veggies, and mix everything together.
Ingredients for Nigerian Fried Rice
- parboiled rice (not pictured). I used whole grain, but any long grain rice will do. Just make sure it is cold before cooking.
- Jamaican curry powder: The type of curry you use matters. Caribbean curry will give the rice the taste we are looking for.
- bouillon seasoning: Use any bouillon brand. Adobo will work just as well.
- thyme
- fresh garlic
- scotch bonnet peppers: It is always better to start off light and add more. Optional if you don't want spice.
- olive oil. Substitute with avocado oil.
- yellow onions: You and substitute with white onions. (Because they taste the same to me)
- frozen peas and carrots

How to Make Nigerian Fried Rice. Step-by-Step
- Prepare rice. Cook rice according to package instructions, substituting water with vegetable broth. Let the rice cool to room temperature if you are making it the day of.
- Heat oil. Add two tablespoons of olive oil to the non-stick pain.
- Add vegetables. First, add chopped onions and garlic. After a minute add the mixed vegetables and all your dry ingredients(bouillon, curry powder, thyme).
- Add rice. After 2-3 minutes, add your last tablespoon of olive oil, the rice, and mix everything together. Make sure the heat is on medium.
- Chopped peppers. Now is the time to add the chopped scotch bonnet peppers.
- Let the rice sit. Remove the rice from the stove and let it sit for 5 minutes.
Storage Tips
Once the rice cools to room temperature, you can place it in an air tight container. Put the rice in the fridge. If you don't have a container, a ziploc/storage bag will do the trick.
Leftover rice will stay good for 3-4 days.
