This Nigerian Roasted Chicken recipe is flavorful, juicy, and a perfect meal matched with your favorite side dish. This recipe goes really well with Nigerian Fried Rice.

There is nothing more satisfying than knowing that on meal prep Sunday all you have to do is make some rice, and veggies, and pop a bird in the oven.
Nigerian Roasted chicken is so easy to make, and you probably already have the ingredients in the pantry.
Ingredients for Nigerian Roasted Chicken
- whole roasting chicken. Usually around 4 lbs.
- garlic powder
- bouillon seasoning. I usually always have chicken bouillon in the pantry, but you can use any bouillon or adobo if you have it.
- ginger powder.
- cayenne pepper (optional)
- white pepper.
- bay leaves. These will go into the cavity of the chicken.
- rosemary.
- smoked paprika.
- salt. Any salt will do. I use Himalayan pink salt.
- mushroom umami (optional). It adds some savoriness and binds all the other flavors.
- olive oil. Substitute with avocado oil. It is for basting the chicken before seasoning.

How to Make Nigerian Roasted Chicken
- Preheat. Set oven to 350 °F
- Prepare Chicken. Clean chicken and discard giblets and neck. Loosen the skin over the breast with your fingers.
- Season. Combine dry ingredients. Rub the mixture under the loose skin and over the whole chicken. Insert bay leaves into the cavity.
- Bake. Place chicken, breast side up, on the middle rack. Bake at 350° for 1 hour and 20 minutes or until the internal temperature of the breast says 165°.
- Rest. Let the chicken rest on the counter for 10 minutes.
- Carve & Enjoy.
Can I use Nigerian hard chicken for this recipe?
Of course! The same process will follow for fowl or rooster. Just follow the directions knowing that cooking times may vary based on the size of the chicken.
