Goat Pepper Soup is a spicy Nigerian light soup made with a combination of different spices and herbs to create its unique taste. It is high in protein and can be eaten alone or perfectly paired with rice, yam, or plantain.

- 3 pounds goat meat cubes
- 1 yellow onion blended
- 1 ½ tablespoons pepper soup spice
- 4 grams Nchanwu leaves roughly chopped
- 4 grams fresh uziza leaves substitute with 1 teaspoon of ground uziza
- 2 habanero peppers blended with onions; substitute with scotch bonnet peppers
- 2 tablespoons olive oil substitute avocado oil
Heat olive oil on medium and add goat meat and the blended onion and peppers. Saute for about 1-2 minutes.
Add 2 tablespoons of pepper soup seasoning. Mix together.
Mix in 2 ½ cups of water and let the goat meat cook for 20 minutes.
After 20 minutes, Add 3 cups of water and the remaining seasoning (nchanwu, ground uziza, habanero peppers, bouillon seasoning).
Let the meat cook for an additional 20-30 minutes until tender. You may need to add a little more water depending on how much liquid you want
Adjust salt and pepper to tolerance.
