Jollof Rice and Chicken is a easy-to-make seasoned, tomato based, rice dish that can be eaten for any meal of the day.

Ingredients for Roasted Chicken
- 3 pounds chicken thighs bone in
- 1 tablespoon garlic powder
- 1 tablespoon bouillon seasoning
- 1½ tablespoons ground ginger
- 1 teaspoon cayenne pepper adjust to tolerance
- 1 teaspoon white pepper
- 2 bay leaves optional
- 2 tablespoons rosemary
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1½ teaspoon mushroom umami optional
- 1 tablespoon olive oil sub. avocado oil
Ingredients for Jollof Rice
- 1 red bell pepper
- 5 plum tomatoes
- 4-5 garlic cloves
- 1 yellow onion diced
- 1 red onion peeled and cut in half
- 2 scotch bonnet peppers sub. habaneros
Pantry Ingredients for Jollof Rice
- 4 cups parboiled rice sub. long grain rice
- 3 bay leaves
- 1 teaspoon Jamaican curry powder
- 1 teaspoon vegetable bouillon seasoning
- 1½ teaspoons dried thyme
- 1½ teaspoons ground nutmeg
- 3 ounces tomato paste
- 2 cups vegetable broth
- 2 tablespoons olive oil
Sauce Prep for Jollof Rice
Preheat oven to 425° F.
Place tomatoes, red bell peppers, and red onions on a baking tray with cooking spray.
After 35-40 minutes, remove tray from the oven and set aside.
Place roasted veggies in a blender with scotch bonnets and garlic cloves. Blend until smooth and set aside.
Jollof Rice Instructions
In a stock pot, heat 2 tablespoons of olive oil. Add chopped yellow onion.
After one minute, add curry powder, thyme, nutmeg, bouillon, and mix together.
Next, add puree mixture to the pot along with 3 bay leaves. Put the heat on low/medium and let it cook for 10 minutes.
Add washed rice and 5 cups of water. Mix everything together. Taste and adjust salt or pepper if needed.
Place foil before covering with the lid. Make sure the stove is on the lowest setting.
After 30 minutes, check and adjust water until rice is cooked.

Roasted Chicken Instructions
Preheat oven to 350 °F
Clean chicken with lime juice and vinegar, rinse, and pat dry.
Combine dry ingredients and rub all over the chicken thighs. Let the bay leaves sit while the chicken marinates. Remove before baking.
Place chicken on a baking sheet on the middle rack. Bake at 350° for 45 minutes to 1 hour or until internal temperature is 165°F. Use parchment paper, foil, or coat the baking sheet with non-stick spray beforehand. Let the chicken rest on the counter for 10 minutes.
