Ingredients

  • 4 scotch bonnet peppers
  • ½ red onion
  • ½ sweet onion yellow onion
  • 4-5 cloves garlic
  • 6 scallion stalks cut the ends before putting into the food processor
  • 7 sprigs of fresh thyme
  • ¼ cup white vinegar
  • ¼ cup soy sauce
  • 2 tablespoons brown coconut sugar
  • 1 tablespoon salt
  • 1 tablespoon ground black pepper
  • 1 tablespoon fresh ginger freshly grated
  • 2 tablespoons allspice seeds freshly ground
  • 2 tablespoons olive oil or any neutral oil
  • ½ fresh lime juice

Instructions

  • Prepare fresh ingredients by peeling or cleaning what is necessary
  • Place all the ingredients, both fresh and dry, into the food processor and puree.
  • Consistency should be semi-smooth with no hidden large chunks.
  • Adjust salt to your preference.
