Equipment

  • 1 roasting pan

Ingredients

  • 1 whole roasting chicken approximately 4 pounds
  • 1 tablespoon garlic powder
  • 1 tablespoon bouillon seasoning
  • ½ tablespoon ginger powder
  • 1 teaspoon cayenne pepper optional
  • 1 teaspoon white pepper
  • 2 bay leaves
  • 2 tablespoons rosemary
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • ½ teaspoon mushroom umami optional
  • 1 tablespoon olive oil sub. avocado oil

Instructions

  • Preheat oven to 350 °F
  • Clean chicken and discard giblets and neck. Loosen the skin over the breast with your fingers
  • Combine dry ingredients together. Rub mixture under loose skin, and over the whole chicken. Insert bay leaves into the cavity.
  • Place chicken, breast side up, on the middle rack.
  • Bake at 350° for 1 hour and 20 minutes or until the internal temperature of the breast says 165°.
  • Let the chicken rest on the counter for 10 minutes.
  • Carve & Enjoy.
