This Nigerian Roasted Chicken recipe is flavorful, juicy, and a perfect meal matched with your favorite side dish.

- 1 whole roasting chicken approximately 4 pounds
- 1 tablespoon garlic powder
- 1 tablespoon bouillon seasoning
- ½ tablespoon ginger powder
- 1 teaspoon cayenne pepper optional
- 1 teaspoon white pepper
- 2 bay leaves
- 2 tablespoons rosemary
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- ½ teaspoon mushroom umami optional
- 1 tablespoon olive oil sub. avocado oil
Preheat oven to 350 °F
Clean chicken and discard giblets and neck. Loosen the skin over the breast with your fingers
Combine dry ingredients together. Rub mixture under loose skin, and over the whole chicken. Insert bay leaves into the cavity.
Place chicken, breast side up, on the middle rack.
Bake at 350° for 1 hour and 20 minutes or until the internal temperature of the breast says 165°.
Let the chicken rest on the counter for 10 minutes.
