It goes by a few different names culturally. Depending on where you come from, it's called okra soup, okra stew, okro stew, or draw soup.

Oftentimes, our traditional soups are great food options for weight loss, but we don't see it physically because of the amount of oil we use, no fresh vegetables, or fatty meats.
Ingredients for this Okro Soup Recipe
- okra. The amount used is approximately 2 packs of okra or you can measure the amount of okra whole before cutting. The smaller the pieces the more draw you will get.
- ground crayfish. Dried shrimp that you can find at any African market.
- smoked turkey wings. I usually cook them whole & pull chunks off the bone before discarding them.
- stockfish. This recipe uses 2-3 pieces but it is not a necessary ingredient for this recipe.
- uziza leaves. They can be found in most African Markets. It gives the soup a spicy feel without the heat. It compares to black pepper.
- ground uziza. Because why not? Just kidding. It is optional, but I feel like it adds a different element to the soup.
- bouillon seasoning. I used chicken bouillon but adobo is fine.
- palm oil. Can also be found in the African Market. This is the minimum amount needed
- spinach. Fresh spinach is preferred. Frozen spinach will add water to the soup and we don't want that.
- scotch bonnet peppers & white onion. Peppers are always optional and make sure the onion is chopped fine.

How to Prepare this Okro Soup Recipe
- Cook meat. Using 8 cups of water, cook stock fish and smoked turkey wings.
- Add seasonings. When the meat is tender, add onions, bouillon seasoning, crayfish, ground uziza, and uziza leaves to the pot. Blend peppers and add at this time.
- Add okra. The water level should be a little below the meat before adding chopped okra and palm oil. Let everything cook for 5-8 minutes. This is also when I remove any meat that is in jeopardy of overcooking.
- Stir in spinach. Mix in the spinach until it wilts.
- Enjoy. Remove the pot from the stove and enjoy with your favorite swallow.
Helpful Tips
- Use a food processor to chop the okra instead of by hand.
- You can add goat, beef, tripe, or fish if you don't want to use smoked turkey.
- Make sure you watch your water levels. If the soup has too much water before you add the okra, it will be watery.

- 740 grams okra finely chopped
- 50 grams ground crayfish
- 1½ pounds smoked turkey wings remove from bone after cooked
- 100 grams stockfish
- 83 grams uziza leaves
- 1 tablespoon ground uziza
- 2 tablespoons bouillon seasoning
- 2 tablespoons palm oil
- 1 lb spinach fresh
- 2 scotch bonnet peppers (habanero) optional
- 1 white onion finely chopped
Instructions
- Use 8 cups of water to cook stock fish and smoked turkey wings.
